Censo “Praruar”, the Sicilian Surprise!

This bottle was a journey... A real good one!

At first pour, Praruar from Censo hits you with intensity. There’s this slightly wild, almost moscato-like note, a burst of acidity and spice that feels more powerful than you expect. It’s not immediately fruity or soft… more sharp, vibrant, and intriguing. The kind of start that makes you raise an eyebrow and say, “Okay, what’s going on here?”

But then the magic happens.

As it opens up, and it really deserves time to breathe, the wine drastically shifts. The edges smooth out, the texture softens, and suddenly you find fruit, warmth, and balance where before there was tension. You start to taste ripe peach, orange peel, honey, and herbs, all carried by that classic Sicilian minerality.

What’s amazing is how the wine evolves in the glass. At first, it feels like something to end the evening with rich, complex, maybe even contemplative. But give it twenty minutes, and it turns into the kind of refreshing, meal-friendly orange that belongs right in the middle of the table.

Praruar is 100% Catarratto, an old Sicilian grape that’s been getting a second life in the hands of small producers like Censo. It’s fermented on the skins (hence the color and depth), made naturally, and full of that honest, unpolished charm that defines the best orange wines.

This bottle is a perfect bridge wine… bold enough for natural-wine lovers, approachable enough for newcomers. It’s funky, fun, and deeply satisfying. A guaranteed conversation-starter, the kind of bottle that keeps everyone around the table curious, engaged, and pouring another glass just to see what happens next.

Before I let you go tho, here is a quick recap on the wine maker and the grape:

Catarratto, the grape behind this wine, is one of Sicily’s oldest and most planted native varieties. Often used for Marsala in the past, but now finding new life through small, careful producers. When treated with respect, it shows off this beautiful mix of zesty acidity, gentle bitterness, and golden fruit that makes it perfect for orange wines.

Censo, the estate, is part of that quiet Sicilian revival. Located near Palermo, it’s a project rooted in history, farming, and patience. The kind of place where the vines grow wild and the wines taste like time and place rather than technology. The name Praruar even means “to bloom again,” which feels fitting, both for the grape and the experience this bottle delivers.
